Founder Gail Becker and her husband sampled pickles from various Jewish delis across Manhattan, including Barney Greengrass, Pastrami Queen, Sarge's, and Katz's.
They were particularly impressed by The Pickle Guys on Essex Street, known for its diverse selection of pickled products.
Inspired by the garlicky flavor of The Pickle Guys' offerings, the pizza features a brine-flavored béchamel sauce, roasted garlic, mozzarella, and fresh dill.
Initially, there were plans to include actual pickle slices as a topping, but this idea was abandoned during development.
The project holds personal significance for Becker, whose late father was a Holocaust survivor and worked at a bakery on the Lower East Side near the pickle shops.
